EGGPLANT BACON, LETTUCE, AVOCADO & TOMATO

This smokey eggplant bacon is a game changer for a veggo breakie sarnie. It’s super easy with very little prep. We had it in a @baked.indonesia ciabatta with some avo, tomato, lettuce, mayo and whole caramelised shallots 👅

INGREDIENTS

1 medium eggplant
2 tbsp. extra-virgin olive oil
2 tbsp tamari
1 tsp maple syrup
1/2 tsp. smoked paprika
1/4 tsp Liquid Smoke
Pinch ground black pepper

DIRECTIONS

1. Preheat oven to 180 degrees c. Line baking tray with silicone reusable baking sheet (or parchment paper).
2. Cut eggplant lengthwise. Slice each quarter into long, thin strips.
3. In a bowl, make the marinade by whisking together olive oil, tamari, maple syrup, paprika, and liquid smoke.
4. Place eggplant slices onto baking sheets and brush both sides with sauce. Season with pepper.
5. Bake until eggplant is cooked through and beginning to get crisp around the edges, about 45-50 minutes.
6. Enjoy in a sarnie or with scrambled tofu on toast or your fave way to have a full English breakfast.
