I made this lemon loaf cake for a dinner last night and thought Iâd share the recipe with you all todayđđItâs perfectly moist, sweet and also gluten, dairy & refined sugar free! đŠđťâđłHereâs what youâll need to make it:
đINGREDIENTS:
2 cups oat flour
3 eggs
1/2 cup coconut oil
1/2 cup canned coconut milk
1 cup coconut sugar
Zest from 3 lemons
3/4tsp baking powder
1/4 tsp bicarbonate of soda
Pinch salt
đMETHOD:
1ď¸âŁPreheat your oven to 180c and line a of tin with baking paper.
2ď¸âŁIn a large mixing bowl, cream together the coconut oil and sugar until well combined, then mix through the coconut milk.
3ď¸âŁBeat in the eggs one at a time.
4ď¸âŁCombine all of the dry ingredients and cold these through the wet mixture to create a smooth batter.
5ď¸âŁPour this into your loaf tin and bake in the oven for 40 minutes until golden.
6ď¸âŁTransfer to a wire wrack and allow to cool completely.
