tahini cauliflower & sweet potato nourish bowl with crispy kale and quinoa đĽ one for the weekdays youâre still feeling a touch broken from ya weekends antics. full of goodness and not requiring of too much brain power to pull together. #chefbruxwfh
ingredients:
– big handful cauli florets
– handful sweet potato pieces đ
– 1 tsp ground coriander
– 1/2 tsp ground turmeric
– 1 tsp paprika
– garlic powder/granules
– 1/4 tsp cumin
– couple handfuls chopped kale đĽŹ
– salad bits – cucumber, tomatoes, pickled onion etc
– 1 portion cooked quinoa / whatever grain or carb you like
– tahini to drizzle
– squeeze of lemon juice to serve đ
– mixed seeds to serve
method:
– add the cauli and sweet potato to a roasting tin and cover with some oil, salt+ pepper, the coriander, turmeric, paprika, garlic powder and cumin
– toss about so the cauli and sweet potato pieces are coated evenly in the seasoning, then roast at 200 for about 20 mins
– remove the roasting tin from the oven and add in the kale (you may want to add some more oil, salt+pepper), then return to the oven and roast for another 5-7 mins
– serve up with the rest of the bowl components
